Ingredients
- 1 kg 1 kg beef short ribs or shank, cubed
- 1 pc 1 onion, quartered
- 3 pc 3 tomatoes, quartered
- 1 pack 1 pack (40-50g) tamarind (sinigang) soup base, or 1/2 cup fresh tamarind pulp
- 2 pc 2 medium radish (labanos), sliced
- 1 bunch 1 bundle string beans, cut into 2-inch lengths
- 2 pc 2 pcs green finger chili (siling haba)
- 2 tbsp 2 tbsp fish sauce (patis)
- 3 pinch Salt to taste
Instructions
- In a large pot, combine beef, water, onion, and tomatoes. Bring to a boil, skimming off scum.
- Reduce heat and simmer covered until beef is tender, about 1.5 to 2 hours, adding water as needed.
- Stir in the tamarind soup base (or cooked and strained fresh tamarind pulp) and mix well until dissolved.
- Season with fish sauce and add green chili, simmer for 5 minutes.
- Add radish and simmer for 5 minutes until slightly tender.
- Add string beans and cook for 3 to 5 minutes until tender-crisp.
- Add kangkong last and cook just until wilted, about 1 to 2 minutes.
- Adjust sourness and saltiness to taste with more soup base or fish sauce, and serve hot with steamed rice.
