Ingredients
- 32.5 pc 30-35 pieces wonton wrappers (molo wrapper)
- 250 g 250g ground pork
- 100 g 100g raw shrimp, peeled and minced (optional)
- 8 clove 3 cloves garlic, minced (for filling), plus 5 cloves for the broth
- 2 stalk 2 stalks spring onions, chopped, divided
- 1 tbsp 1 tbsp soy sauce
- 0.5 tsp 1/2 tsp sesame oil
- 0.25 tsp 1/4 tsp ground black pepper
- 1 pc 1 medium onion, chopped
- 1 tbsp 1 tbsp fish sauce (patis)
- 2 tbsp 2 tbsp cooking oil
- 1 cup 1 cup cooked, shredded chicken (optional, for a heartier broth)
- 1 tbsp Toasted garlic bits, for garnish
- 1 pc Calamansi, for serving
Instructions
- In a bowl, combine ground pork, minced shrimp, minced garlic, half the spring onions, soy sauce, sesame oil, and black pepper. Mix well to make the filling.
- Place about 1 teaspoon of filling in the center of each wonton wrapper. Moisten edges with water and fold into a triangle or purse shape, sealing tightly. Repeat with remaining wrappers and filling.
- Heat oil in a large pot over medium heat. Sauté garlic and onion until fragrant and golden.
- Pour in chicken broth and bring to a boil. Season with fish sauce.
- If using, add shredded cooked chicken to the broth and simmer for 5 minutes.
- Gently drop the molo dumplings into the simmering broth, a few at a time, and cook for 5-7 minutes until they float and the filling is cooked through.
- Taste and adjust seasoning with more fish sauce or pepper as needed.
- Ladle the soup and dumplings into bowls, garnish with remaining spring onions and toasted garlic bits.
- Serve hot with calamansi on the side.
