🍜 Pancit Canton / Pancit Bihon

Ingredients
- 250 g 250g pancit canton noodles (or 250g pancit bihon/rice noodles, soaked in water 10 minutes)
- 250 g 250g chicken breast or pork, thinly sliced
- 150 g 150g medium shrimp, peeled and deveined (optional)
- 2 tbsp 2 tbsp cooking oil
- 4 clove 4 cloves garlic, minced
- 1 pc 1 medium onion, sliced
- 3 tbsp 3 tbsp soy sauce
- 2 tbsp 2 tbsp oyster sauce
- 1 cup 1 cup cabbage, sliced
- 1 cup 1 cup carrots, julienned
- 1 cup 1 cup snow peas or baguio beans, sliced
- 0.5 cup 1/2 cup dried wood ear mushrooms, soaked and sliced (optional)
- 3 tbsp 3 tbsp fish sauce (patis)
- 1 tsp 1 tsp ground black pepper
- 1 pc 1 piece calamansi or lemon per serving, for squeezing
- 1 stalk Spring onions, chopped, for garnish
Instructions
- If using pancit bihon, soak the rice noodles in room-temperature water for 10 minutes until pliable, then drain well. If using pancit canton, no soaking is needed.
- Heat oil in a large wok or pan over medium-high heat. Sauté garlic and onion until fragrant.
- Add chicken or pork slices and cook until lightly browned, about 5 minutes. Add shrimp and cook until pink, about 2 minutes, then set the meat and shrimp aside.
- In the same pan, pour in chicken stock, soy sauce, oyster sauce, and fish sauce; bring to a simmer.
- Add carrots and wood ear mushrooms first, cooking for 2 minutes, then add cabbage and snow peas, cooking until just tender-crisp.
- Return the cooked meat and shrimp to the pan and mix well.
- Add the noodles gradually, tossing continuously to absorb the liquid and sauce evenly. Cook for 5-8 minutes until noodles are tender and most liquid is absorbed.
- Season with ground black pepper and adjust soy sauce or fish sauce to taste.
- Transfer to a serving platter, garnish with chopped spring onions, and serve hot with calamansi on the side.
