  1. Break up the cold rice with your hands or a fork to separate the grains, ensuring no large clumps remain.
  2. Heat oil in a large wok or skillet over medium heat and add the minced garlic.
  3. Fry the garlic slowly, stirring constantly, until golden brown and crisp; scoop out about half of the toasted garlic and set aside for garnish, leaving the garlic oil in the pan.
  4. Increase heat to medium-high, add the rice to the garlic oil, and stir-fry, breaking up any remaining clumps.
  5. Season with salt and pepper, tossing continuously until the rice is heated through and lightly toasted, about 5-7 minutes.
  6. Transfer to a serving platter and top with the reserved crispy garlic bits and chopped spring onions.
  7. Serve hot alongside eggs, tocino, longganisa, or any Filipino breakfast (silog) dish.
