  2. Add tomato and cook, mashing slightly, until it breaks down into a light sauce.
  3. Add the canned sardines with their sauce, breaking them up gently. Simmer 2 to 3 minutes to let the flavors meld.
  4. Add the chayote and stir to coat in the sardine-tomato mixture.
  5. Pour in water, cover, and simmer over medium-low heat for 8 to 10 minutes, until the chayote is tender but still slightly crisp.
  6. Season with fish sauce, salt, and pepper to taste.
  7. Garnish with chopped spring onions, if using, and serve hot with rice.
