Ingredients
- 2 pc 2 medium ampalaya (bitter gourd), seeded and sliced thin
- 3 pinch 1 tsp salt (for de-bittering)
- 2 tbsp 2 tbsp cooking oil
- 3 clove 3 cloves garlic, minced
- 1 pc 1 small onion, sliced
- 2 pc 2 medium tomatoes, chopped
- 150 g 150g ground pork or sliced pork (optional)
- 2 tbsp 2 tbsp fish sauce (patis)
- 3 pc 3 large eggs, beaten
- 3 pinch salt and pepper to taste
- 0.5 tsp Pepper, to taste
Instructions
- Sprinkle sliced ampalaya with 1 tsp salt, massage gently, and let sit for 10 minutes to draw out bitterness. Rinse well and squeeze out excess liquid.
- Heat oil in a pan over medium heat. Sauté garlic, onion, and tomatoes until fragrant and softened.
- If using pork, add it and cook until browned and no longer pink, about 5 minutes.
- Add the ampalaya and fish sauce, stir-fry for 3-4 minutes.
- Pour in the water, cover, and simmer for 3-5 minutes until ampalaya is tender but still slightly crisp.
- Push vegetables to one side of the pan, pour in the beaten eggs, and let set slightly before scrambling and mixing everything together.
- Season with salt and pepper to taste.
- Serve hot with steamed rice.
