Ingredients
- 1 kg Medium squid, cleaned and sliced into rings (ink sacs reserved, optional)
- 2 cups Coconut milk
- 1 cup Coconut cream
- 4 cloves Garlic, minced
- 1 pc Medium onion, chopped
- 1 thumb Ginger, julienned
- 3.5 pc Pieces green finger chili (siling haba)
- 2 pc Pieces red chili (siling labuyo), optional for spice
- 2 tbsp Fish sauce
- 1 tbsp Cooking oil
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
Instructions
- Clean the squid thoroughly, slicing bodies into rings and keeping tentacles whole.
- Heat oil in a pan and sauté garlic, onion, and ginger until fragrant.
- Pour in the coconut milk and bring to a simmer, stirring occasionally.
- Add the squid and simmer gently for 10-15 minutes until tender, being careful not to overcook into rubbery texture.
- Stir in coconut cream and continue to simmer for another 5 minutes until the sauce thickens slightly.
- Season with fish sauce, salt, and pepper.
- Add the green and red chilies during the last 3-4 minutes of cooking for heat and color.
- Turn off heat and serve hot with steamed rice.
