🥥 Chicken Binakol

Ingredients
- 1 kg Chicken, cut into serving pieces
- 4 cups Fresh buko (young coconut) water
- 1 cup Young coconut meat, strips
- 1 thumb Ginger, sliced into strips
- 1 pc Onion, sliced
- 4 cloves Garlic, minced
- 2 tbsp Fish sauce
- 2 cups Malunggay leaves or chili leaves (dahon ng sili)
- 1.5 pcs Green chili (siling pangsigang)
- 2 tbsp Cooking oil
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
Instructions
- Heat oil in a pot and sauté ginger, onion, and garlic until fragrant.
- Add chicken pieces and cook until lightly browned.
- Pour in fish sauce and coconut water, and bring to a boil.
- Lower heat and simmer for 20-25 minutes until chicken is tender, skimming off scum as needed.
- Add young coconut meat strips and green chili, and simmer for 5 minutes.
- Add malunggay or chili leaves and cook for 1-2 minutes more.
- Season with salt and pepper to taste, and serve hot as a soup with rice.
