Ingredients
- 3 cup 3 cups glutinous rice (malagkit), rinsed and drained
- 0.5 kg 1/2 kg chicken, cut into serving pieces
- 2 cup 2 cups coconut milk
- 1 cup 1 cup coconut cream
- 3 tbsp 3 tbsp annatto (atsuete) seeds soaked in 1/4 cup warm water, or 2 tbsp atsuete oil
- 4 tbsp 4 tbsp cooking oil
- 5 clove 5 cloves garlic, minced
- 1 pc 1 medium onion, chopped
- 2 pc 2 tomatoes, chopped
- 100 g 100g chorizo de bilbao, sliced
- 1 pc 1 red bell pepper, sliced into strips
- 1 cup 1 cup green peas
- 2 tbsp 2 tbsp fish sauce (patis)
- 2 pc 2 pieces bay leaves
- 3 pinch Salt and ground black pepper, to taste
- 0.5 tsp Pepper, to taste
- 2 pc 2 hard-boiled eggs, sliced, for garnish
- 100 g 100g queso de bola or cheese, grated, optional garnish
Instructions
- Strain the annatto-soaked water to extract the orange-red liquid; set aside.
- Heat oil in a large, wide pan or paellera over medium heat. Sauté garlic, onion, and tomatoes until softened and fragrant.
- Add chicken pieces and cook until lightly browned on all sides, about 8 minutes.
- Add sliced chorizo and cook briefly to release its oils, about 2 minutes.
- Stir in the rinsed glutinous rice, coating it well with the oil and aromatics.
- Pour in the coconut milk, chicken broth, and annatto liquid; add bay leaves and season with fish sauce, salt, and pepper. Stir well and bring to a boil.
- Once boiling, lower heat to a simmer, cover, and cook for 15 minutes without stirring, until most liquid is absorbed.
- Gently fold in the coconut cream, green peas, and bell pepper strips. Cover and continue cooking on low heat for 10-15 minutes until rice is fully cooked and tender.
- Turn off heat and let it rest, covered, for 5 minutes.
- Garnish with sliced hard-boiled eggs and grated cheese if using, then serve hot directly from the pan.
