  1. Boil shrimp in 3 cups water for 3 minutes until pink; remove shrimp, peel half of them (leave some whole for garnish), and reserve the shrimp stock.
  2. Boil pork belly in water until tender, about 30-40 minutes; slice thinly once cooled.
  3. Soak the Malabon noodles in warm water until pliable, about 15-20 minutes, then drain.
  4. Strain the annatto-soaked water to extract the orange-red liquid (or dissolve atsuete powder in the shrimp stock).
  5. In a large pan, heat oil and sauté garlic and onion until fragrant. Add the sliced pork and squid rings; cook squid just until opaque, about 2 minutes, then remove squid to avoid overcooking.
  6. Pour in the annatto liquid and shrimp stock; season with fish sauce. Bring to a simmer to create the sauce.
  7. Add the drained noodles directly into the sauce, tossing gently to coat evenly and cook until noodles are tender and have absorbed the orange sauce, about 5-8 minutes.
  8. Return the cooked squid to the noodles and mix briefly.
  9. Transfer noodles to a large serving platter. Arrange peeled and whole shrimp, sliced hard-boiled eggs, crushed chicharon, smoked fish flakes, spring onions, and toasted garlic bits on top.
  10. Serve immediately with calamansi on the side, mixing toppings into the noodles just before eating.
