🥦 Beef with Broccoli

Ingredients
- 500 g 500 g beef sirloin, thinly sliced against the grain
- 2 tbsp 2 tbsp soy sauce
- 1 tbsp 1 tbsp cornstarch (for marinating)
- 1 tsp 1 tsp sesame oil
- 1 pc 1 head broccoli, cut into florets
- 4 clove 4 cloves garlic, minced
- 1 thumb 1 thumb ginger, julienned
- 1 pc 1 small carrot, sliced (optional)
- 3 tbsp 3 tbsp oyster sauce
- 1 tbsp 1 tbsp soy sauce (for sauce)
- 1 tsp 1 tsp sugar
- 3 tbsp 3 tbsp cooking oil
- 3 pinch Salt and pepper to taste
- 0.5 tsp Pepper, to taste
Instructions
- Marinate beef slices in soy sauce, cornstarch, and sesame oil for 15 to 20 minutes.
- Blanch broccoli florets in boiling salted water for 1 to 2 minutes until bright green and tender-crisp, then drain and set aside.
- Heat 2 tbsp oil in a wok over high heat and stir-fry the marinated beef in batches until just cooked, about 1 to 2 minutes per batch. Remove and set aside.
- Add remaining oil to the wok and sauté garlic and ginger until fragrant.
- Add carrot, if using, and stir-fry briefly, then mix in oyster sauce, soy sauce, beef broth, and sugar, bringing to a simmer.
- Stir in the cornstarch slurry and cook until the sauce thickens.
- Return the beef and blanched broccoli to the wok, tossing well to coat everything in the sauce.
- Season with salt and pepper to taste and serve immediately with steamed rice.
