🍲 Beef Caldereta

Ingredients
- 1 kg 1 kg beef chuck or brisket, cubed
- 0.25 cup 1/4 cup soy sauce
- 3 clove 3 cloves garlic, minced
- 1 pc 1 onion, chopped
- 3 pc 3 tomatoes, chopped (or 1 cup tomato sauce)
- 0.25 cup 1/4 cup liver spread (or 2 pcs chicken liver, boiled and mashed)
- 2 pc 2 medium potatoes, cubed
- 2 pc 2 carrots, cubed
- 1 pc 1 red bell pepper, sliced
- 0.5 cup 1/2 cup green olives, pitted
- 0.5 cup 1/2 cup grated cheese (quickmelt or cheddar)
- 2 pc 2 pcs dried bay leaves
- 3 tbsp 3 tbsp cooking oil
- 1 tsp 1 tsp chili flakes (optional)
- 3 pinch Salt and pepper to taste
- 0.5 tsp Pepper, to taste
Instructions
- Marinate beef cubes in soy sauce for at least 30 minutes.
- Heat oil in a large pot and brown the marinated beef on all sides. Set aside.
- In the same pot, sauté garlic and onion until fragrant, then add tomatoes and cook until softened.
- Return the beef to the pot, add beef broth and bay leaves, bring to a boil, then simmer covered over low heat until beef is tender, about 1.5 to 2 hours, adding water as needed.
- Stir in the liver spread and mix well to thicken and enrich the sauce.
- Add potatoes and carrots, simmer until nearly tender, about 15 minutes.
- Add bell pepper, olives, and cheese, stirring until cheese melts and sauce thickens.
- Season with salt, pepper, and chili flakes if using.
- Simmer a few more minutes until vegetables are fully tender, then serve hot with rice.
