Ingredients
- 1 kg 1 kg beef shank or brisket, cut into chunks
- 1 pc 1 onion, quartered
- 2 pc 2 medium potatoes, peeled and halved
- 1 pc 1 small cabbage, cut into wedges
- 2 pc 2 pcs saba banana (unripe), peeled and halved (optional)
- 1 bunch 1 bundle pechay or bok choy
- 3 pc 3 pcs corn on the cob, cut into thirds
- 1 bunch 1 bundle string beans, cut into 2-inch lengths (optional)
- 2 tbsp 2 tbsp fish sauce (patis)
- 1 tsp 1 tsp whole peppercorns
- 3 pinch Salt to taste
Instructions
- Place beef in a large pot, cover with water, and bring to a boil, skimming off scum that rises to the surface.
- Add onion and peppercorns, reduce heat to low, cover, and simmer until beef is fork-tender, about 1.5 to 2 hours, adding water as needed to keep beef submerged.
- Add fish sauce and season with salt to taste.
- Add corn and potatoes, simmer for 10 minutes until potatoes begin to soften.
- Add saba banana and cabbage, simmer for another 5 minutes.
- Add string beans and pechay, cook just until vegetables are tender, about 3 to 5 minutes.
- Adjust seasoning as needed and serve hot with steamed rice and patis with calamansi on the side.
