Ingredients
- 1 kg Medium shrimp, whole, trimmed
- 2 pc Medium tomatoes, quartered
- 1 pc Medium onion, quartered
- 1 pc Radish (labanos), sliced
- 1 bunch Kangkong (water spinach), trimmed
- 1 bunch String beans, cut into 2-inch lengths
- 2 pc Pieces green finger chili
- 2 tbsp Fish sauce
- 3 pinch Salt to taste
Instructions
- In a pot, combine rice washing, tomatoes, and onion, and bring to a boil, simmering for 5 minutes.
- Mash the tomatoes slightly, then stir in the tamarind soup base until dissolved.
- Add the radish and simmer for 3-4 minutes until slightly tender.
- Add the string beans and cook for another 2-3 minutes.
- Season with fish sauce and salt, adjusting sourness to taste.
- Add the shrimp and green chili, and simmer for 3-4 minutes until shrimp turn pink and are just cooked (avoid overcooking to keep shrimp tender).
- Add the kangkong last and simmer for 1 minute until just wilted.
- Turn off heat immediately and serve hot with steamed rice.
