Ingredients
- 1 kg Tilapia, bangus, or galunggong, cleaned and sliced
- 2 cups Coconut milk
- 1 cup Coconut cream
- 4 cloves Garlic, minced
- 1 pc Medium onion, chopped
- 1 thumb Ginger, julienned generously
- 3.5 pc Pieces green finger chili
- 1 pc Piece long green squash or eggplant, sliced (optional)
- 2 tbsp Fish sauce
- 1 tbsp Cooking oil
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
Instructions
- Season the fish lightly with salt and set aside.
- Heat oil in a pan and sauté garlic, onion, and ginger until fragrant and the ginger is slightly softened.
- Pour in the coconut milk and bring to a gentle simmer, stirring to combine.
- Add the eggplant or squash if using, and simmer for 5 minutes until slightly tender.
- Gently add the fish and simmer over low-medium heat for 8-10 minutes without stirring too much, to keep the fish intact.
- Stir in the coconut cream and simmer for another 3-5 minutes to thicken the sauce.
- Season with fish sauce, salt, and pepper, and add the green chili during the last 2-3 minutes.
- Turn off heat and serve hot with steamed rice.
