Ingredients
- 1 kg Chicken, cut into serving pieces
- 0.25 cup Calamansi juice
- 0.25 cup Soy sauce
- 5 cloves Garlic, minced
- 1 tsp Ground black pepper
- 1 cup All-purpose flour
- 0.5 cup Cornstarch
- 1 tsp Salt
- 1 tsp Garlic powder
- 1 pc Egg, beaten (optional, for extra crisp coating)
- 2 cup Cooking oil, for deep frying
Instructions
- In a bowl, marinate chicken with calamansi juice, soy sauce, garlic, and pepper for at least 30 minutes, or up to overnight.
- In a separate bowl, combine flour, cornstarch, salt, and garlic powder.
- Remove chicken from marinade and pat dry slightly; dredge each piece in the flour mixture, pressing to coat well (dip in beaten egg first if desired for extra crunch).
- Heat oil in a deep pan to 170-180°C (340-350°F).
- Fry chicken in batches for 12-15 minutes, turning occasionally, until golden brown and cooked through.
- Drain on paper towels or a wire rack to remove excess oil.
- Serve hot with steamed rice and a vinegar-garlic dipping sauce.
