Ingredients
- 2 pc 2 medium ampalaya (bitter gourd), thinly sliced
- 3 pinch 1 tsp salt (for de-bittering)
- 2 pc 2 medium tomatoes, diced
- 1 pc 1 small red onion, thinly sliced
- 2 pc 2 pieces salted egg (itlog na maalat), sliced
- 3 tbsp 3 tbsp vinegar
- 1 tbsp 1 tbsp fish sauce (patis)
- 0.5 tsp 1/2 tsp sugar
- 0.25 tsp pepper to taste
Instructions
- Sprinkle sliced ampalaya with salt, massage gently, and let sit for 10-15 minutes to draw out bitterness.
- Rinse the ampalaya thoroughly under cold water and squeeze out excess liquid, then pat dry.
- In a large bowl, combine the ampalaya, diced tomatoes, and sliced red onion.
- In a small bowl, whisk together vinegar, fish sauce, sugar, and pepper to make the dressing.
- Pour the dressing over the vegetables and toss gently to combine.
- Let the salad marinate for 5-10 minutes in the refrigerator for the flavors to meld.
- Top with sliced salted egg just before serving.
- Serve chilled as a side dish with grilled or fried meat and rice.
