Ingredients
- 1.5 cups Tiny dried shrimp (alamang), rinsed and drained
- 3 pc Pieces eggs, beaten
- 0.5 cup All-purpose flour
- 2 tbsp Cornstarch
- 1 pc Medium onion, finely chopped
- 2 stalks Spring onions, chopped
- 1 tsp Ground black pepper
- 2 tbsp 1/2 cup cooking oil, for pan-frying
Instructions
- Rinse the tiny dried shrimp briefly in water to remove excess salt, then drain well and pat dry.
- In a bowl, combine the dried shrimp, chopped onion, and spring onions.
- Add the beaten eggs, flour, and cornstarch, mixing until a thick batter forms. Season with pepper (go easy on salt since alamang is naturally salty).
- Heat oil in a pan over medium heat.
- Scoop about 2-3 tablespoons of the mixture per fritter and drop into the hot oil, flattening slightly with the back of a spoon.
- Fry for 2-3 minutes per side until golden brown and crispy on the edges.
- Drain on paper towels to remove excess oil.
- Serve hot with steamed rice and a vinegar-garlic dipping sauce.
