Ingredients
- 8 pc 8 pieces saba bananas (plantains), ripe, peeled and halved lengthwise
- 0.5 cup 1/2 cup ripe jackfruit (langka), sliced into strips
- 8 pc 8 pieces lumpia wrappers
- 0.75 cup 3/4 cup brown sugar
- 2 cup 2 cups cooking oil, for frying
Instructions
- Peel the saba bananas and slice each one in half lengthwise.
- Lay a lumpia wrapper flat and place a banana half and a few strips of jackfruit near one edge.
- Sprinkle 1-2 tbsp of brown sugar evenly over the banana and jackfruit.
- Fold the sides of the wrapper inward, then roll tightly from the filled edge, sealing the tip with a little water.
- Repeat with the remaining wrappers, banana, jackfruit, and sugar.
- Heat oil in a wide frying pan over medium heat and add a few tablespoons of brown sugar to the oil to help caramelize the rolls.
- Fry the turon rolls in batches, turning frequently, until golden brown and the sugar has caramelized into a crisp, glossy coating, about 4-5 minutes.
- Remove and drain briefly on a wire rack (not paper towels, as the caramel will stick); let cool slightly before serving warm.
