Ingredients
- 1 kg Medium shrimp, trimmed (antennae and legs removed), deveined
- 2 cups Coconut milk (kakang gata)
- 1 cup Coconut cream (thicker second extract, optional for richness)
- 4 cloves Garlic, minced
- 1 pc Medium onion, chopped
- 1 thumb Ginger, julienned
- 2 pc Pieces green finger chili, whole
- 1.33 cup 1 pack (200g) squash (kalabasa), cubed
- 1 bunch String beans, cut into 2-inch lengths
- 2 tbsp Fish sauce
- 1 tbsp Cooking oil
- 3 pinch Salt, to taste
- 0.5 tsp Pepper, to taste
Instructions
- Heat oil in a pan and sauté garlic, onion, and ginger until fragrant.
- Pour in the coconut milk and bring to a gentle simmer, stirring occasionally to prevent curdling.
- Add the squash cubes and cook for 5-7 minutes until slightly tender.
- Add the string beans and simmer for another 3 minutes.
- Season with fish sauce, salt, and pepper.
- Add the shrimp and green chili, and cook for 3-5 minutes until shrimp turn pink and opaque. Do not overcook.
- If using coconut cream, stir it in during the last minute of cooking for extra richness.
- Turn off heat and serve immediately with steamed rice.
