Ingredients
- 1 kg 1 kg beef brisket or shank, cubed
- 1 pc 1 onion, quartered
- 6 clove 6 cloves garlic, minced
- 1 thumb 1 thumb ginger, sliced
- 0.5 cup 1/2 cup soy sauce
- 0.25 cup 1/4 cup brown sugar
- 2 pc 2 pcs star anise
- 2 pc 2 pcs bay leaves
- 2 tbsp 2 tbsp cooking oil
- 3 pinch Salt and pepper to taste
- 0.5 tsp Pepper, to taste
- 1 cup Garlic fried rice and beef broth soup, for serving
Instructions
- In a large pot, boil beef in water with quartered onion until tender, about 1.5 to 2 hours, skimming off scum. Reserve the broth.
- In a separate pot, heat oil and sauté garlic and ginger until fragrant.
- Add the cooked beef, soy sauce, brown sugar, star anise, and bay leaves, and 2 cups of the reserved beef broth.
- Simmer uncovered over medium-low heat for 20 to 30 minutes until the sauce reduces and thickens slightly, stirring occasionally.
- Stir in the cornstarch slurry and cook until the sauce becomes glossy and coats the beef.
- Season with salt and pepper to taste.
- Serve the beef pares hot with garlic fried rice and a small bowl of the remaining beef broth on the side.
